I figured I would post some quick and simple recipes, so here goes!

Meat Loaf

1 - 10oz can of Cream of Mushroom soup
2 lbs ground beef
1 pkg Lipton Onion Soup mix (dry)
1/2 cup bread crumbs
1 egg, beaten
1/4 cup water

In a large bowl, mix thoroughly 1/2 cup of mushroom soup, beef, onion soup mix, bread crumbs and egg. In 12x8 inch baking pan, firmly shape meat mixture into an 8x4 inch loaf.

Bake at 350 degrees for 1 1/4 hours or until done. Spoon off 2 tablespoons drippings, reserve.

In a saucepan over medium heat, heat remaining soup, water and reserved drippings to boiling, stirring occasionally. Thin sauce with additional water to desired consistency. Spoon over meat loaf.

Makes 8 servings.


Lasagna

1 - 10oz can of Cream of Mushroom soup
1/2 cup of milk
3/4 lb ground beef
1 and a 1/2 cups of spaghetti sauce
lasagna noodles, cooked and drained
1 cup of shredded cheddar cheese

In small bowl, combine soup and milk; set aside. In 3 quart saucepan over medium-high heat cook beef until browned, stirring to separate. Spoon off fat. Stir in spaghetti sauce. Heat through, stirring occasionally. Heat oven to 400 degrees F. In 8 inch square baking dish, spoon half the meat mixture and arrange half the noodles over mixture; trim to fit. Spoon half the soup mixture over noodles. Repeat layers. Sprinkle with cheese. Bake 30 minutes or until hot and bubbling. Let stand 10 minutes before serving. Serves 4.

For those of you who may not know this, I just love to cook!
I have a recipe that I make every once in a while that is delicious, easy and nutritious!
All I do is sautee some zucchini, tomatoes and onions together with a bit of margarine and salt in a pan on medium heat...they are great with anything from rice to whatever meat you may be having. :D
If any of you have some equally easy and tasty recipes, please share them in my comments. I would love to hear them.

It is a nice sunny day here today, cool and comfortable again. I am doing my housework and plan to go for a walk a bit later as well. Lovely day! :D
You will see some changes here on a regular basis, as I plan to change the background here as often as I can.
My cats are pretty happy these days due to the nice weather....when it is too hot they are like me and don't take it too well, so when it is comfortable they are quite content.

Well, I have a migraine...again. Gosh, I think this month has been THE worst for me as far as headaches are concerned. I know I have been under a lot of stress, but sheesh, this is ridiculous. :(
I had hamburger and potatoes for supper tonight...I sort of forced myself to eat; I just didn't feel like eating.
Do any of you get headaches..and if so, what works for you?
When I get them bad I usually dim (or turn out altogether) the lights and close my eyes, take a hot shower, listen to soft and relaxing music...even with ocean and bird sounds in the background. I have a set of tapes with the sound of nature in the backgorund.
Just wondering: how do you all handle stress and headaches? I would so appreciate your comments...thanks much!

Well, the weather today is cooler than yesterday. I am not complaining, though, as I really don't do too well in the extreme heat and humidity. I much prefer cooler temperatures, so it is just perfect for me. :D
I made some awesome potatoes tonight and I got the idea from watching a show on Food Network.
I peeled and washed some sweet potatoes and then cut them to about two inch pieces. Then I put them in a roasting pan and sprinkled them with some olive oil, added salt and pepper and roasted them in the oven at 425 degrees for a half hour. They were absolutely delicious! I had that with a small steak for supper this evening.

Today was not overly interesting so I didn't post anything until now.
The weather was warmer here in Montreal today, kind of humid almost (compared to the cooler weather we had over the previous few days).
I would like to thank those for your kind words in reference to the award I won that I mentioned about the other day. I really appreciate your kindness. :)

I got such a pleasant surprise today that totally threw me for a loop! I was presented with a beautiful award for my forum.

I added a new theme at my forum today....space...the final frontier!!! :D (Home is Where the Heart is...url is in my links).
The banner was created by one of my members who resides in England. I think he did a great job!
There were three to choose from and there was a voting contest happening, but there were three banners (two other members created the other two), and his got 15 votes! The others pulled in 4 and 5 votes respectively.
I changed the entire color scheme to match the banner as best I could and to give it a space theme.
Today has been pretty cloudy and the temperature is bearable and comfortable, so I am not complaining.
I don't even know what I am going to have for supper tonight yet, but I will post it at a later time.

I had honey and garlic sausages with rice for supper this evening. It was quite tasty, actually.
It looks as though it might rain tonight, but if not, they are predicting rain for tomorrow, so either way it is coming.

Remember that splendid farm I spoke of yesterday? Well, I went there BUT they are not open until June 11th this year. :( It wasn't all in vain, though, there is a beautiful huge park there, so my friend and I sat there for a while and enjoyed the view (there is a little pond there, too), and the weather. It is quite cloudy here but hasn't rained yet. I heard that the forecast calls for rain this evening or tonight, though.
When we got back from the park, we came back home and there is a restaurant not far from where we live, so we stopped off there and had a couple of Spring rolls and a Coke. The Spring rolls were so fresh and delicious, very, very good! :D
I changed the background and a bit of the colors on my blog today, I hope you all like it. I enjoy changing the colors from time to time, as I get bored sometimes with the same background, even if it is beautiful. LOL!
I haven't been feeling very good these days, I have been getting headaches a lot, which is unusual for me. I mean, I have never gotten them this often as I have this week, so I have been a bit edgy and not quite myself...please forgive me. :(
I will finish up the chicken tonight and plan to have honey and garlic sausages with cabbage and potatoes for dinner tomorrow night.

It looks as if tblog has fixed the glitches...well, at least most of them, anyway.
Tonight I am preparing some leftover chicken with onion and garlic and I shall have that with some rice. Should be great!
Another lovely day here in Montreal, it is so great to have such nice weather without that unbearable humidity.
I plan to try and go to visit a farm tomorrow that is free and open to the public. It is a petting zoo, of sorts, and is open to the public from May until September, if I am not mistaken.
They usually have a donkey, cows, goats, lambs, a couple of llamas (I don't get too close to them, as they can spit) LOL! :D
I love donkeys and goats, though, so it should be lots of fun. I will see if I am able to go tomorrow and if I get a chance to I will mention it in my blog tomorrow.

It is gorgeous weather here in Montreal today...it was sunny and comfortable and now it is raining. I don't mind the rain, so it is nice for me nonetheless. :)
Last night (I forgot to mention in my Wednesday blog) I purchased a barbecue chicken from my local supermarket.
They had just finished barbecuing the birds so it was so fresh! I had that (a leg) with some vegetables. Tonight I plan to have some cold white meat from same bird with some potatoes...mmmm. :D
You know, I probably had more yesterday that I wished to add to my blog, but since I didn't want to take a chance and add my blog then, (should have written it down, I guess), I now don't remember what I wanted to say.

It rained very heavily this morning here in Montreal and we had a serious thunderstorm happening! :D
Today I thought I would talk about something different...my discussion forum.
As some of you already know, but for those who do not, the link is in my blog under "Home is Where the Heart is".
Have you ever been on a diet...or are you presently on a diet? Could you use some support or offer your support to others? How about arthritis? Do you have osteo or rhumatoid arthritis? Have you ever gone through depression and made it through and think you can offer support to others on how to handle it?

I have tried a few times to do my blog today but each time I tried the tblog server was down....grrrrrr. I couldn't even get to the site never mind update my blog.
Well, I sure hope that they have found a decent server and that the extreme slowness as well as the inability to even get to the site has been regulated.
I have a migraine! :( I am in a lot of pain right now...the thing is, I do not get them often, but when I do, it is pretty bad.
I am preparing a corned beef for supper tonight and I shall have that with boiled cabbage and potatoes...I just love a boiled meal. Yum! :D
The weather here today is pretty nice...breezy and mild, not hot or cold. Just perfect.
Magoo, I meant to tell you and forgot to, sorry...I did try the towel in the freezer and that did help .... thanks for the suggestion.

Ahhh....the weather here in Montreal today is great!!! It is in the 60's Fahrenheit and breezy, sunny mixed with clouds. What a perfect day...I love it! :D
I plan to get a lot of housework and organizing done today, this is the perfect day for it. When it is too hot it is really hard to get things done, so today is my day for taking care of it. Then I plan to enjoy the day by taking a walk and then sitting on my balcony for a while.
I am having a hamburger with potatoes for dinner this evening, at least I can cook without adding to the heat in my apartment. It is nice and cool now with the windows open and I couldn't be happier.

Today is a hazy day, sun mixed with clouds and it rained this morning. I sure hope it cools down bit.
I am going to have a salmon sandwich for lunch later on this afternoon...I had a couple of soft boiled eggs for breakfast. As for supper, I don't really know yet, but it won't be anything too heavy.
I drink a lot of water and iced tea in this weather and don't eat quite as much...not that I eat a lot anyway, but I definitely eat less when it is hot and humid. I try to eat fruits and vegetables as much as I can.
I was just wondering: has anyone here ever been on a diet...or are you on a diet? I am not asking for myself but I have a friend who is on a diet and just wondered what type of diet people have been on...or are on.

Today my blog will be a bit different from the "norm", as I suppose I need to vent, in a way...but nonetheless in a constructive way and I hope you, my beloved and loyal readers, are not put off by it.
You know, I guess I am tired of people making excuses for things. For example, if a friend, relative, acquaintance, etc., tells you that they are going to do something, why is it that they keep making all sorts of excuses for not doing it? They certainly find time to do other things that are important to them, so why do they make excuses for not doing what they promised they would? I mean, I hate to make promises I cannot keep, so I try to be very careful to not over-commit myself to anything, as I hate to hurt peoples' feelings.
Another thing I need to share, and that is this: have you ever had a friend and then lost that friend? Sure, I think we have all gone through it in our lives at some point or another, right? I am not talking about losing the friend via death, I simply mean that the person drifts away, becomes cold and distant and seems to no longer share your enthusiasm for that friendship?
I usually come right out and say something, but in a kind way, let them know that I notice that they have become distant, etc. See, I do not believe in forcing anyone to be my friend...either they are or they aren't, I cannot stand pretending, etc.
There was a thunderstorm this evening that seemed to cool it down somewhat here, thankfully....well, thanks for listening, everyone, and for your patience with my need to talk about a couple of things that I needed to get off my chest.

Well, it is an absolute scorcher here in Montreal today...very hot and humid. I have already looked over all your suggestions as far as dealing with the heat and I thank you!
I have already put a towel in my freezer, as this is one I hadn't even thought of! :)
I have a new theme coming up for my discussion forum soon...space! I will change the graphics near the end of the month and put up a space theme. It should be interesting and fun. :)
I still don't know what I am going to have for supper tonight...probably just potatoes, tomatoes and onions, as I really am not very hungry due to the heat here.
I have been drinking a lot of water and iced tea....it helps to keep me cooler. Fortunately, my apartment isn't hot YET...but this is because I keep the blinds and curtains, along with the windows, closed all day. Once the sun goes down and it is a wee bit cooler, I open up all the windows and let the good and cooler air in.

Today is a sunny and warm day here again in Montreal. My cats are better today than yesterday, so I know it isn't as hot as it was yesterday just by watching them. :)
I've discovered that there are some really nice people here at tblog, and it's so nice to see comments in my blog from people I have never even met. I have had members of my forum leave me messages as well as tblog members, and it really makes my day to see that people really read my blog and care enough to leave me a message every now and again. It sure puts a smile on my face.

I was JUST about to publish this blog when all of a sudden, poof! Tblog went down. Grrrrrrrrrrrrrrrr.... :(
Anyway, sorry that I haven't been as good about updating my blog as I have been in the past, but my schedule has been really hectic the last few days.
It was really warm and sunny here in Montreal today and even my cats are feeling the heat.
I was just wondering: how do you handle the heat? I mean, what are your tips for cooling down and to get a good night's sleep in the extreme heat? (without an air conditioner).

Today is a sunny and hot day, mixed with clouds. Not too hot though, yet, thankfully, so I plan to roast a chicken tonight for supper with potatoes......mmmm. :)
My cats are already reacting to the upcoming heat wave that we will no doubt have here in Montreal...they are quieter than usual and just lie down and hardly even budge when I call them. Usually they at least lift their heads but now....LOL!
Only cat lovers or cat owners can pretty much visualize that. :D
I found this cute joke on the web and thought it would be neat to share here. In order to comprehend this joke, you need to know the French word for snail...escargot. (pronounced S-car-GO) Enjoy!

A snail buys a fast new car
There was once a snail who was sick and tired of his reputation for being so slow. He decided to get some fast wheels to make up the difference. After shopping around a while, he decided that the Datson 240-Z was the car to get. So the snail goes to the nearest Datsun dealer and says he wants to buy the 240-Z, but he wants it repainted "240-S".

The dealer asks, "Why 'S'?"

The snail replies, "'S' stands for snail. I want everybody who sees me roaring past to know who's driving."

Well, the dealer doesn't want to lose the unique opportunity to sell a car to a snail, so he agrees to have the car repainted for a small fee.

The snail gets his new car and spent the rest of his days roaring happily down the highway at top speed. And whenever anyone would see him zooming by, they'd say "Wow! Look at that S-car go!"

I had a very exhausting day today. It was kind of dull here in Montreal but certainly not cold; quite nice, actually. (not that I mind the cold) :)
All my muscles are aching and although I am pretty exhausted, I feel like I accomplished a lot today, so it is a good exhausted. This will be a really short blog (some of you are probably happy, as the last story I put in my blog was pretty long!) :wink:
I think I will relax for a while and make some microwave popcorn, have a hot chocolate, curl up with my cats for a while and get to bed.

Today ended up being sunny and pleasant here in Montreal! You know, with the hustle and bustle of life we tend to get lost in ourselves and all the stuff we need to do. Sometimes, though, it is good to be able to relax, smell the flowers, enjoy the rainbows, listen to the sound of the rain falling or the ocean, your pets purring, barking or chirping, the birds chirping outside, and most of all, being able to show an act of kindness to someone.
I found this story on the web and just had to share it. Although I cried at the end of this story, it touched me in a way that makes me want to slow down a bit and just listen...encourage, reach out.

Kyle

One day when I was a freshman in high school, I saw a kid from my class walking home from school. His name was Kyle. It looked as if he was carrying all of his books. I thought to myself, "why would anyone bring home all his books on a Friday? He must really be a nerd."

I had quite a weekend planned (parties and a football game with my friends tomorrow afternoon), so I shrugged my shoulders and went on. As I was walking, I saw a bunch of kids running toward him. They ran at him, knocking all his books out of his arms and tripping him so he landed in the dirt. His glasses went flying, and I saw them land in the grass about ten feet from him.

He looked up and I saw this terrible sadness in his eyes. My heart went out to him, so I jogged over to him and as he crawled around looking for his glasses, I saw a tear in his eye. As I handed him his glasses, I said, "Those guys are jerks. They really should get lives."

He looked at me and said, "Hey, thanks!" There was a big smile on his face. It was one of those smiles that showed real gratitude. I helped him pick up his books, and asked him where he lived.

As it turned out, he lived near me, so I asked him why I had never seen him before. He said he had gone to a private school up until now. I would have never hung out with a private school kid before. We talked all the way home, and I carried his books. He turned out to be a pretty cool kid. I asked him if he wanted to play football on Saturday with me and my friends. He said yes.

We hung out all weekend and the more I got to know Kyle, the more I liked him, and my friends thought the same of him. Monday morning came, and there was Kyle with the huge stack of books again. I stopped him and said "Damn boy, you are really gonna build some serious muscles with this pile of books everyday!" He just laughed and handed me half the books.

Over the next four years, Kyle and I became best friends. When we were seniors, we began thinking about colleges. Kyle decided on Georgetown, and I was going to Duke. I knew that we would always be friends, that the miles would never be a problem. He was going to be a doctor, and I was going for business on a football scholarship.

Kyle was valedictorian of our class. I teased him all the time about being a nerd. He had to prepare a speech for graduation. I was so glad it wasn't me having to get up there and speak.

On graduation day, I saw Kyle. He looked great. He was one of those guys that really found himself during high school. He had filled out and actually looked good in glasses! He had more dates than me and all the girls loved him! Boy, sometimes, I was jealous! Today was one of those days.

I could see that he was nervous about his speech, so I walked up to him and smacked him on the back and said, "Hey big guy, you'll be great!" He looked at me with one of those looks (the really grateful one) and smiled and said "thanks".

As he started his speech, he cleared his throat, and began.

"Graduation is a time to thank those who helped you make it through those tough years. Your parents, your teachers, your siblings, maybe a coach......but most of all, your friends. I am here to tell all of you that being a friend to someone is the best gift you can give them ...... I'm going to tell you a story."

I just looked at my friend with disbelief as he told the story of the first day we met.

He had planned to kill himself over the weekend.

He talked of how he had cleaned out his locker so his Mom wouldn't have to do it later, and was carrying his stuff home. He looked hard at me and gave me a little smile. "Thankfully, I was saved. My friend saved me from doing the unspeakable."

I heard the gasp go through the crowd as this handsome, popular boy told us all about his weakest moment. I saw his mom and dad looking at me and smiling that same grateful smile.

Not until THAT moment, did I realize its depth.

Never underestimate the power of your actions. With one small gesture, you can change a person's life without even knowing it, for better or worse.

God puts us all in each other's lives to impact one another in some way. Let's pray and hope that our impact is a positive one!

Well, that roast pork last night was scrumptious! So tender and tasty...I really enjoyed it. :) I plan to have some leftover tonight, so that should be good.

Life

You know, I thought I would leave you all a very touching story that I read in a Chicken Soup for the Soul book quite a while ago. Enjoy! :)

The Puppy

A store owner was tacking a sign above his door that read "Puppies for Sale."

The signs have a way of attracting children. Soon a little boy appeared at the sign and asked, "How much are you gonna sell those puppies for?"

The store owner replied, "Anywhere from $30 to $50."

The little boy reached into his pocket and pulled out some change. "I have $2.37. Can I look at them?"

The store owner smiled and whistled. Out of the kennel came his dog named Lady, running down the aisle of his store followed by five little puppies.

One puppy was lagging considerably behind. Immediately the little boy singled out the lagging, limping puppy. He asked, "What's wrong with that little dog?"

The man explained that when the puppy was born, the vet said that this puppy had a bad hip socket and would limp for the rest of his life.

The little boy got really excited and said, "That's the puppy I want to buy!"

The man replied "No, you don't want to buy that little dog. If you really want him, I'll give him to you."

The little boy got upset. He looked straight into the man's eyes and said, "I don't want you to give him to me. He is worth every bit as much as the other dogs and I'll pay the full price. In fact, I will give you $2.37 now and 50 cents every month until I have him paid for." The man countered, "You really don't want to buy this puppy, son. He is never gonna be able to run, jump and play like other puppies."

The little boy reached down and rolled up his pant leg to reveal a badly twisted, crippled left leg supported by a big metal brace. He looked up at the man and said, "Well, I don't run so well myself and the little puppy will need someone who understands." The man was now biting his bottom lip. Tears welled up in his eyes ...He smiled and said, "Son, I hope and pray that each and every one of these puppies will have an owner such as you." In life, it doesn't matter who you are, but whether someone appreciated you for what you are, accepts you and loves you unconditionally.

A real friend is one who walks in when the rest of the world walks away.

Well, I am having a roast pork for dinner this evening. I cook it slowly for two hours...the first hour at 300 degrees and the second hour at 350. It is always delicious and tender! I put seasoned salt and garlic pepper and just let it roast. Yum! :)
I thought I would add some of my favorite things here...so here goes!

Today is a dull and cloudy day here in Montreal, at least so far. Evelyn, my black cat that was sick the other day, is doing much better. She was sick that one day and seems to be fine now, thankfully.
I don't know about everyone else, but I love to take advantage of store sales. If they have bathroom tissue, paper towels, shampoo, etc., I try to stock up on those items. Since these items are taxable here in Quebec, and we pay 15% tax (7% Federal, 8% Provincial = 15%), it is worth my while to get the items on sale. :)

Wow, am I ever behind today on updating my blog!
Today was a cool yet comfortable day here in Montreal. I was able to get my laundry done and that is always encouraging.
It was quite an eventful day for me today so I am most likely going to sleep quite well tonight. :)
You know, friendship is such a special thing...it's amazing how a kind word, a gentle touch, a push when you need it, a hug, a smile of encouragement, and how a good friend seems to just...know these things.
I cannot say that I have many friends, because this wouldn't be the truth. What I can say is that I have a few GOOD friends. To me, quality is much more important than quantity, and good friends are hard to find.
I thought I would include a quote to end my blog this evening.

I am having an interesting day today trying to figure out the weather here in Montreal. Today was dull and windy, chilly but not cold. This is the time of year that I never know how the weather will be...they even predicted SNOW a few days ago but we didn't get it.
Last night, like every night, I took a shower, but this time it was ...... different. When I first began my shower the water was luke warm. :( I thought to myself, "Great....just what I need. A lukewarm, which will no doubt turn to cold, shower." After a few minutes, though, the water heated up and I was able to have my usual hot shower. What a relief...since my apartment is on the cool side, it would not have been too good to have had anything but a hot shower, and especially lukewarm or cold.

Today is a very rainy and chilly day here in Montreal. I am almost finished my Spring cleaning....one of my cats, my beloved black one, was sick last night and vomited several times. She is doing better today, but I was worried. :(
Tonight I am going to have a barbecued chicken leg with potatoes for supper.

Today is actually cold here in Montreal. I always try to be prepared for weather changes and dress appropriately, otherwise if you aren't careful you can get sick. :(
The roast lamb I had last night was scrumptious! I will make a stew out of the leftover lamb and eat that for dinner this evening...that ought to be awesome!
My cats are acting peculiar again, especially the tabby...running back and forth with no direction and looking skyward. It is really quite hilarious! :D

Can you believe it? It has gone from really warm and humid back to cool and chilly now here in Montreal.
Well, just yesterday I wore a T-shirt out and today I needed a jacket. I have to admit, though, that today's weather is more "seasonal" than yesterday's for the first week in May. It is the time of year that one needs to be extra careful, as many people get colds because they aren't prepared for the changes.
I have added a link to my blog today...the site is called "Tropic's Paradise"...very relaxing and beautiful site.
Tonight I am preparing a roast lamb for dinner with some mashed onion potatoes. Should be great!

It is a humid and muggy day here again in Montreal. Last night, though, it rained and it was nice to have some cooler, fresher air after being hit with a heat spell so suddenly after just a few days earlier it was chilly.
A friend of mine is taking me out to dinner this evening at a buffet type restaurant that has a wide variety of foods at a great value, so I am so looking forward to that.
I made myself a salad last night with cucumbers, salmon, a small amount of grated cheese, chopped onion, two cloves of garlic and a nice vine ripened tomato...lemon juice and olive oil is all I needed with that, and a little salt and pepper...it was delicious as well as healthy and refreshing, and perfect for a hot day.

I wanted to add this yesterday but tblog was down for a while and when I got home last night I had a migraine so I figured I would get some sleep before I add this one.
I went to a huge shopping mall yesterday and had a great time. Since it was so hot and muggy yesterday, the air was anything but fresh so I was glad to get out of the heat for a while and be in an air conditioned and fresher environment for a while. By the time I got home I had a migraine and just didn't feel up to updating my blog.
I feel better today, though, so I thought I would do both Saturday and Sunday's at the same time and catch up.
